CIJ Day 12: BigMacs and Cupcakes

Ms. Ciara and I spent the day making a 2 new cookie recipes and starting on one craft activity. I let her look through my current Christmas book, "The Christmas Cookie Club" and pick out one recipe she'd like to make. Of course, her choice was probably the most nontraditional of them all. It' didn't require any baking, just a little "magic" to transform premade cookies into a master piece.  Here are my "Hamburger Cookies", step, by step.

First we colored our coconut with green food coloring

Next, we mixed our powered sugar, milk and almond extract together to make the frosting. The frosting is then colored orange, with a blend of red and yellow food coloring. The frosting makes the "cheese" that glues the burger together.

We then brushed our vanilla wafer tops with a dab of egg white and sprinkled them with sesame seeds.

We then spread a small amount of our frosting on the bottom wafer.

Grasshopper cookies we then added and pushed down to adhere to the bottom "bun".

A larger layer of frosting was added to the top of the grasshopper cookie (aka: the hamburger patty) to resemble a layer of cheese.

The entire cookie, with the moist frosting was then "dunked" into the coconut (aka: lettuce).

Lastly, another thin layer of frosting was put on the underside of the top Nilla Wafer and then placed on top of the burger to complete the look. We really were amazed at how well they turned out and looked like mini sliders.

Last, but not least, we made a BIG MAC for my husband. It looked super cool.

In the book, the cookie club member that made the cookies, talked someone at McDonalds into giving her some of their small bags and that's how she presented them at the party. Now that would be perfect! Guess I may have to do some sweet talking tomorrow at McDonalds.

  3. Michelle - Fantastic! DH said they looked like real hamburgers. I think I might make them for DSS's birthday party at the end of the month. I wish I could come up with something else other than coconut. Most kids don't like coconut.

  4. Kim, honestly you can't taste it that much. The mint and almond extract overpower the coconut 100%.
